2 ea - Idaho potatoes, peeled and ¼”diced
1 T - Garlic, chopped
¾ C - Mushrooms, sliced
1 C - Tasso, diced
1 T - Oil blend
½ C - Green onion, sliced
¾ C - Caramelized Onions
Oil for frying
Creole seasoning to taste
Preheat oil for frying to 350°. Deep fry potatoes until golden brown, then drain and reserve. Preheat about 1T oil in a medium sized sauté pan. Add garlic and lightly toast. Add mushrooms, onions and ham and sauté, then add fried potatoes. Sauté until evenly heated. Season with Creole seasoning to taste. Add green onions and cook for 1-2 minutes.
