Baked Sweet Potatoes with Pecan Butter

Baked Sweet Potatoes with Pecan Butter are the perfect accompaniment for steaks or pork tenderloin, especially during the holidays. Or, for a great light lunch or vegetarian dinner, pair them with a big tossed green salad.

8 ea - Louisiana sweet potatoes
½ lb - Butter, room temperature
¼ C - Chopped pecans
¼ C - Light brown sugar
2 T - Steen’s molasses

Place sweet potatoes on a sheet pan and bake in a 350° oven for 1 hour, or until soft to the touch. Mix butter, chopped pecans, light brown sugar and molasses well. Slice baked sweet potatoes lengthwise and top with about
2 tablespoons of the pecan butter.
