Potatoes Au Gratin

10 each - Large Idaho Potatoes
1 Lb - Shredded Gruyere Cheese
1 Lb - Shredded Mozzarella Cheese
1 Lb - Shredded White Cheddar Cheese
1 Qt - Heavy Whipping Cream
1 cup - bread crumbs
Salt and Pepper to taste

Slice potatoes length wise about 1/16 inch. Place a layer of potatoes in the bottom of baking pan, then top with a mixture of shredded cheeses, add a pinch of salt and pepper. Repeat this process until pan is filled to about 1 inch from the top. Add heavy cream to pan evenly, and finish with 1 layer of mixed cheese on top. Press potatoes and cheese down in pan just to compact a little. Cover with parchment paper and foil. Bake 1 hour on the top rack in oven at 300 degrees. Sprinkle bread crumbs on top, rotate pan in oven and bake for another 20 to 30 minuets on 200 degrees or until potatoes are fork tender and bread crumbs are golden brown.
