Bacon Wrapped Filet over Bleu Cheese Mashed Potatoes With Bourbon Pepper Cream Sauce

Serves 4

4 ea. USDA Prime 8 oz. Filets
8 strips Applewood smoked bacon

Bleu Cheese Mashed Potatoes
3 C - Potatoes, boiled and mashed
1 ½ C - Bleu cheese
1 C - Heavy whipping cream
½ C - Sweet butter
Salt and black pepper to taste

Combine all ingredients and mash well.

Bourbon Pepper Cream Sauce
1 Tsp- Olive oil
3 ea. - Shallots
½ C - Veal stock or demi-glace
½ C - Heavy cream
1/3 C - Bourbon
1 Tbsp - Coarse black pepper
Salt to taste

Sauté shallots in olive oil. Add veal stock, then heavy cream, then bourbon, black pepper and salt, stirring constantly. Reduce for 15-20 minutes, or to desired thickness.

Season filets on all sides with salt and pepper to taste. Wrap two strips of bacon around each filet and secure with toothpicks. Sear filet on all sides to desired temperature. Place each filet on bleu cheese mashed potatoes and top with bourbon pepper cream sauce.
